Goodbye Love Posts




I am a little sad that February is over. It is nice to think about what you love each day and I have really enjoyed other peoples posts about their loves. I am glad to be over the guilt of not posting each day though. Isn't it funny that I felt guilty over that? Anyway, I would like to suggest something new. One thing I LOVE is new recipes. It is so hard to come up with something new to cook each night that is healthy and fast so I would like everyone that reads my blog to consider posting one of their favorite recipes. If you don't have a blog than post it as a comment or email it to me and I will pass it on. Think about all the new recipes we could have! I am in the process of trying a couple of new recipes so I will post my new favorite in a few days.

That's so funny that you had a feeling of guilt for not posting everyday. I know what you mean though- I had to hurry and get it done early in the day or else I felt stressed that it wasn't getting done.
And this recipe idea is great. I'm always up for new (and fast) meals. Here's one for you that somebody just told me about and we LOVE it. It's called Potacos. Basically tacos on a potato:
A baked potato topped with turkey burger sprinkled with taco seasoning, cheese, olives, green onions, tomotoes, mashed up avocado, and sour cream. We've actually had it four times this last week.
p.s. I always use turkey breast burger now instead of hamburger. I think it tastes SO much better and it's better for you- it doesn't have that "cow" taste if you know what I mean.
That's just one that I could write on the top of my head. I'll post more later.

I don't know about 'healthy' but here is an easy recipe that I have recently come across.

Easy Velveeta Chicken Fajita
1 lb chicken(cut into bite-sized pieces)
1 tsp. chili powder
1/4 tsp. salt
2 1/4 cups water
2 cups elbow macaroni, uncooked
1 cup each red and green peppers chopped
1 medium onion chopped
1/2 lb. Velveeta cup up

Cook chicken and seasonings in large skillet on med-high heat until the chicken is cooked through.(I always use pre-cooked chicken that I have cooked in the crock-pot and put in the freezer for such a recipe. I hate cooking chicken.) Stir in water. Bring to Boil. Stir in Macaroni;cover. Reduce heat to med-low. Simmer for 5 minutes. Add peppers and onions;cover and simmer an additional 5 minutes. Add velveeta. Cook until melted, stirring frequently. Makes about 6 cups.

I love new recipes too, and especially ones for the crockpot:) Check out crockpot365.blogspot.com It is the greatest site for recipes. My favorite so far was the Tamale Pie.

1 can corn
1 can diced tomatoes
1 can black beans
1 pound of browned meat browned with a 1/2 onion
1 T Chili Powder to taste
1 tsp cumin
1/4 tsp paprika
1/2 cup shredded cheese

Mix it together and top with corn bread mix batter made according to directions. Cooks on high 2-4 hours, low 4-7 hours
